Storage vegetables

Although we only have two weeks of deliveries left, a great thing about many fall vegetables is how long they can be stored. Cabbage is a perfect example and even comes with it’s own built-in storage container, ie, the outer leaves. Cabbage can keep for weeks in the refrigerator. I would recommend putting it in a plastic bag. However, the outer leaves also act as a “bag” of sorts. When you go to use the cabbage, simply peel off any outer leaves that are yellowing and you’ll see that these will have helped keep the inner leaves fresh and green. In fact, when harvesting cabbage from the field, we leave a large number of extra leaves on for this very reason. These protect the inner head and are removed each week before we sell the cabbage.

There are multiple other vegetables that will keep very well and therefore may be worth stocking up on in the next couple of weeks. Hakurei turnips and radishes will both keep for several weeks. Simply remove the green tops, wrap the roots in a plastic bag, and refrigerate. Garlic and potatoes are some of the best known storage vegetables. Garlic can be kept in the pantry at room temperature or in the refrigerator. Potatoes actually store much better if refrigerated and should be kept in a sealed container or plastic bag to prevent them from drying out. Kohlrabi, beets, carrots, and purple-topped turnips are some of the best-storing vegetables around. Simply remove any green tops, wrap in a plastic bag, and keep in the refrigerator until you’re ready to use! Of the more “green” veggies, both escarole and radicchio will keep for a couple weeks wrapped in plastic and refrigerated. Similar to cabbage, the outer leaves of both escarole and radicchio can simply be removed if they start to yellow and will help keep the inner core nice and fresh.

    Wow, thanks for all those wonderful suggestions of how to store all these great winter veggies.
    With only one more week to go I am already getting sad thinking about the lettuce mix,
    arugula, Romaine hearts etc. that I will no longer have fresh each week. Buying lettuce
    from the store just doesn’t cut it. Glad you’ve been able to enjoy this gorgeous weather!
