Summer at last

Wow, this week has gotten away from me. It’s Wednesday already, but with the weather finally warm and sunny, it’s hard not to spend all of my free time out in the garden. One week after being planted, the tomato, pepper, and eggplant seedlings have all begun to put on brilliantly green new growth, a sure sign that they’re getting accustomed to life in the ground. As a result, I stocked up on trellis stakes earlier this week and will begin the ongoing process of “basket-weave” trellising the tomatoes in the next day or two.

The garden is getting fuller and fuller, with about two-thirds of the space now planted. What’s in the ground right now? Beets, kale, summer broccoli (although that’s still not doing great and may get pulled soon), pole and bush beans, baby kale, cucumbers, summer squash, spring mix and arugula, sweet potatoes, eggplant, peppers, tomatoes, and basil.

Along with the ongoing task of planting, which happens nearly every week throughout the season to ensure a continued harvest, we’ve finally started to see the fruits of our spring labor as well! So far this week, I’ve harvested over 3 lbs of spring mix and 5 oz each of kale and arugula, with plenty more still out there. As a result, we’re starting to be able to tailor our dinners to what’s available in the garden. From our ever-favorite arugula pesto to chickpea-kale burgers and countless salads, these fresh-as-they-can-be ingredients are what we’ve been looking forward to for months!
